I have been freshly milling my flour for a couple of years, but now I do it exclusively to battle an autoimmune disease in our family. To be honest, I prefer the taste of this real bread, and I love all the nutrients that we get from eating something so delicious! This hamburger bun recipe from Grains in Small Places is a favorite! I make the dough in my bread machine, and it turns out perfectly. The I use parchment and sheet trays to bake in the oven.
I recently got a Brod & Taylor Proofing box for Christmas, and I love it! It proofs the dough at the perfect temperature. You also don’t need to cover the rolls while rising, so there is no plastic wrap waste. Here are some of the stages in photos. I hope you try it out!
