You have to try this easy and tasty slow cooker casserole! As the name suggests, it taps into the ingredients often associated with arancini. Normally, arancini are stuffed and fried rice balls. This is a casserole version that is so easy to cook. It would also make a great side dish or potluck contribution! 🙂 I have a VIDEO at the bottom of the post for those that are visual learners.
Recipe:
4 c cooked white rice 2 c cream cheese 1 c chicken broth 2 c finely grated Pecorino or parm 6-8 oz fresh mozzarella (or shredded is fine) package of turkey pepperoni 3 cloves of garlic, minced 1/4 c finely chopped Italian parsley 1/4 c extra-virgin olive oil
Coat slow cooker insert In a large bowl, combine rice, cream cheese, broth, 1 cup of the Pecorino. Put 1/2 of the rice mixture across the bottom, layer 1/2 of mozzarella, and a layer of pepperoni. In a small bowl, combine garlic, parsley, oil, and remaining pecorino cheese. Spread 1/2 of that on top. Repeat layers Cover and cook on low about 3 hours. Remove lid. Cook without lid another 30 minutes for absorbing liquid.
