This simple lamb shank recipe with veggies could be your next favorite dish! Lamb has so much flavor, and slow cooking with comforting veg is great for any time of the year. I used my Instant Pot Electric Dutch Oven. It is perfect for searing and slow cooking right in the same pot. Less dishes for me. š
I got my lamb shanks HERE! You can also use the bones to make delicious broth. The ingredients are humble and affordable.
Ingredients and directions:
- 3-4 lamb shanks
- 1 onion, chopped
- 2 carrots, chopped
- 3 garlic cloves, minced
- 1/4 c red wine vinegar
- 2 cups stock
- 2 Tbsp tomato paste
- 1 tsp dried thyme
- Course salt and pepper to taste
- Sear lamb in crockpot (or on stovetop). Remove, and saute veg. Deglaze with liquids and reduce a bit. Add in lamb shanks. Cover and cook on low 8-9 hours.
