Spring has sprung here where I live, so it’s time to start thinking about all things strawberries! This Strawberry Buttermilk Cake is from THIS COOKBOOK, and it is easy and tasty! 🙂 With pantry ingredients and a simple 9 inch pie pan, this cake comes together easily. No fancy recipe that requires 1,000 dishes to wash. I have a short video below.

- 1.5 c flour
- 1.5 tsp baking powder
- salt
- 6 TBS butter
- 1 c sugar
- 1 egg
- 1/2 c buttermilk
- vanilla
- 1 lb strawberries, halved
- 350 F preheated oven, cream butter and sugar until fluffy. Add egg, buttermilk, and vanilla until blended
- Combine dry ingredients
- Gradually add flour mixture to wet ingredients until just combined
- Pop into pie plate and arrange strawberry halves on top
- Bake for 10 minutes, reduce temp to 325 F and bake for about another 50 minutes (you know your oven)
- Cool on a wire rack
