The Useful Pile of Shredded Zucchini

As we start fall and say goodbye to summer, the mighty zucchini can be preserved for the winter and spring. It is a vegetable that can easily be integrated into a variety of recipes.

Instead of trying to dream up fourteen different zucchini dinners, I like to shred it. Once shredded, zucchini becomes far more cooperative. It can quietly disappear into breads, muffins, pancakes, fritters, casseroles, soups, and all sorts of other things. I use my Cosori dehydrator and then pop the dehydrated bits into glass jars to await their fate! 😂

What Can You Make With Shredded Zucchini?

Quite a lot, which is why I consider that pile so useful.

You can turn it into:

  • Zucchini bread
  • Sourdough discard zucchini muffins
  • Pancakes
  • Savory fritters
  • Egg bakes
  • Meatloaf or meatballs
  • Soups
  • Casseroles
  • Vegetable patties
